How this instrument works
'Net carbs' has no official definition. The phrase does not appear anywhere in 21 CFR Part 101, the FDA's food-labeling regulations, and the agency has never adopted a standard formula for it — a food-law review from OFW Law puts it plainly: it is a consumer-marketing concept, not a regulated term. What most low-carb sources mean by it is total carbohydrate minus dietary fiber minus some discount for sugar alcohols, on the reasoning that fiber passes through largely undigested and sugar alcohols raise blood glucose less than an equal weight of sugar. This calculator uses one common version of that formula: subtract fiber in full, and subtract half the weight of sugar alcohols.
That half-weight discount is itself a convention, not a law of biochemistry. Sugar alcohols vary widely in how much they actually affect blood glucose — erythritol is close to metabolically inert, while maltitol raises blood sugar substantially more than the group average — so a single 50% discount applied to all of them is a simplification some sources skip entirely and others adjust ingredient by ingredient. Total carbohydrate and dietary fiber, by contrast, are both figures the FDA does require on a Nutrition Facts label, so those two inputs at least come from a standardized source even though the subtraction itself does not.
Practically, the number exists to answer one question: of the carbohydrate a food contains, how much is expected to behave like carbohydrate in the body, raising blood glucose the way starch or ordinary sugar does? Fiber and sugar alcohols are excluded from that estimate because they are absorbed and metabolized differently than the sugars and starches the subtraction leaves behind. It is a reasonable, widely used approximation for planning a low-carbohydrate diet — not a government-verified number, and not one every food label, restaurant, or nutrition app will compute the same way twice.

Worked example — 40 g total carbs, 8 g fiber, 6 g sugar alcohols
A label lists 40 grams of total carbohydrate, 8 grams of dietary fiber, and 6 grams of sugar alcohols. Subtract the fiber in full: 40 − 8 = 32. Subtract half the sugar alcohol weight: 6 × 0.5 = 3, so 32 − 3 = 29 grams of net carbs. Roughly a quarter of the labeled carbohydrate has been discounted before this food is counted against a daily carbohydrate target.
A high-fiber food with 25 grams total carbohydrate and 15 grams of fiber, no sugar alcohols, computes to just 10 grams net — fiber alone did most of the work. A sugar-free candy with 30 grams total carbohydrate, only 2 grams of fiber, but 20 grams of sugar alcohols computes to 18 grams net: 30 − 2 − (20 × 0.5) = 30 − 2 − 10 = 18. The sugar-alcohol discount matters far more here than the fiber does, which is exactly the case where different formulas would disagree most.
Questions
Is 'net carbs' an official FDA term?
No. It has no legal or regulatory definition and does not appear in 21 CFR Part 101, the section of federal food-labeling regulations that governs Nutrition Facts panels. The FDA requires manufacturers to disclose total carbohydrate, dietary fiber, and total sugars, but it neither defines a 'net carbs' figure nor requires one to appear anywhere on a label. Any net-carbs number on packaging is a voluntary, unregulated calculation the manufacturer chose to publish.
Why does this calculator subtract only half the sugar alcohol weight?
Because sugar alcohols are, on average, only partially absorbed and metabolized compared to ordinary sugar, so a full one-for-one subtraction would overstate how much they should be discounted for most of them. A 50% discount is a common middle-ground convention, not a rule every source follows — some low-carb formulas skip sugar alcohols entirely, and some apply a different discount to each type based on how strongly it is known to affect blood glucose.
Why subtract fiber from total carbohydrate at all?
Because dietary fiber largely resists digestion in the small intestine and passes through without being broken down into glucose the way starch is, so it contributes little to the blood-sugar rise that carbohydrate counting is usually trying to track. Subtracting it produces a number closer to the carbohydrate that will actually be absorbed as sugar, which is the entire premise behind the 'net' in net carbs.
Do all sugar alcohols affect blood sugar the same amount?
No, and this is one of the bigger weaknesses of a flat 50% discount. Erythritol is absorbed largely unchanged and excreted without being metabolized, producing almost no blood-glucose effect, while maltitol behaves much closer to ordinary sugar and can raise blood glucose substantially. A formula that treats every sugar alcohol identically will understate the impact of some and overstate the impact of others.
Will two low-carb products with identical Nutrition Facts panels show the same net carbs?
Not necessarily. Because no standard formula exists, one manufacturer might subtract fiber only, another might subtract fiber and all sugar alcohols in full, and another might use the half-weight convention this calculator uses. Two products with identical total carbohydrate, fiber, and sugar alcohol numbers can legitimately print different net-carb figures on their packaging, simply because each chose a different unregulated formula.
