How this instrument works

Recipes call for whichever type the author happens to bake with, so sooner or later you'll want to substitute the type you actually have in the fridge or pantry. All three are the same living organism (Saccharomyces cerevisiae) at different moisture levels: fresh (cake) yeast is the wettest and most perishable, active dry yeast is dried into granules and needs proofing in warm water before use, and instant yeast is dried more finely and can be mixed straight into flour.

This calculator uses a simple, widely repeated home-baking convention: fresh yeast ÷ 2 = active dry, fresh yeast ÷ 3 = instant, which works out to active dry yeast weighing about 1.5× as much as instant for an equivalent amount of leavening power. It's internally consistent and easy to remember, which is likely why it's so commonly repeated across recipe sites and home-baking conversion calculators.

Worth knowing honestly: professional baking references don't all agree on the exact ratio. King Arthur Baking's own professional reference chart uses a slightly different conversion — multiply fresh yeast by 0.4 for active dry and by 0.33 for instant, which works out closer to active dry being about 1.2× instant rather than 1.5×. Neither convention is "wrong" exactly; they reflect small differences in how potency is measured and rounded across sources. This calculator's simpler ratio is the more common one for home baking, but if a professional recipe's substitution comes out noticeably different from what you'd expect, that discrepancy is why.

yieldRelativeToInstant is 1/3 for fresh yeast, 2/3 for active dry, or 1 for instant, so every input first converts to an instant-yeast-equivalent, then scales to the other two. This is a common, simpler home-baking ratio; some professional references use a slightly different ratio (see FAQ).

Worked example — converting a standard 7 g packet of active dry yeast

A standard 7 g packet of active dry yeast: instantEq = 7 × 0.66667 ≈ 4.67 g of instant yeast would give equivalent leavening power. activeDryEq = 4.67 × 1.5 = 7.0 g, matching the original input exactly (self-consistent, since the input was already active dry). freshEq = 4.67 × 3 = 14.0 g of fresh (cake) yeast would be the equivalent.

The same 7 g, but this time specified as instant yeast rather than active dry: instantEq = 7.0 g (self-consistent again), activeDryEq = 7 × 1.5 = 10.5 g of active dry, freshEq = 7 × 3 = 21.0 g of fresh yeast — notice this needs more active dry and fresh yeast than the first example, because instant is more concentrated per gram than active dry.

A 21 g European-style fresh yeast cube converts the other direction: instantEq = 21 × 0.33333 = 7.0 g instant, activeDryEq = 21 × 0.33333 × 1.5 = 10.5 g active dry, freshEq = 21.0 g (self-consistent) — the same 7 g instant-equivalent as the previous example, just arrived at from the fresh-yeast side.

Questions

Why does active dry yeast weigh more than instant yeast for the same job?

Active dry yeast is dried in larger granules and has a thicker protective coating of dead cells around the living yeast inside, which means proportionally less of its weight is active leavening power compared to the more finely dried instant type. That's why recipes typically call for more active dry by weight than instant to get the same rise — this calculator's 1.5× ratio reflects that difference.

Do I need to proof active dry yeast before using it?

Yes — active dry yeast generally needs to be dissolved in warm water (commonly cited around 105-115°F) for several minutes before mixing into a recipe, both to rehydrate it and to confirm it's still active (proofing). Instant yeast doesn't need this step and can typically be mixed directly into the dry flour, which is one of its main convenience advantages.

Is this ratio the same one professional bakers use?

If precision matters for your bake, weighing on a kitchen scale and using this calculator's gram conversions will give a more consistent result than swapping teaspoon for teaspoon.

Does fresh yeast go bad faster than dried yeast types?

Yes, considerably faster — fresh (cake) yeast is highly perishable and typically needs to be used within about 2 weeks even refrigerated, while active dry and instant yeast are shelf-stable for months unopened and still keep well for a good while after opening if stored airtight and cool. That's a big part of why home bakers tend to keep dried types on hand and reach for fresh yeast only when a recipe specifically calls for it.
