How this instrument works
Steak cook time depends on thickness, desired doneness, heat source, starting temperature, and the cut itself, which is why every steakhouse chart gives ranges rather than single numbers. This calculator uses a commonly published grilling convention — roughly 2:30, 3:30, 4:30, and 6:30 per side for a 1-inch steak at rare, medium-rare, medium, and well-done respectively over a hot (~400°F) grill — and scales that per-side time linearly with thickness.
That linear scaling is a deliberate, disclosed simplification, not a physical law: real cook time doesn't scale perfectly with thickness, because heat has to conduct further into a thicker steak and the ratio of surface area to volume changes as thickness increases. A 2-inch steak won't take exactly twice as long as a 1-inch steak of the same doneness, though the linear estimate is usually in the right neighborhood for typical steak thicknesses between about 3/4 inch and 1.5 inches.
Because of that, treat every number here as a starting estimate for planning purposes — how long to preheat, how long before you should start checking — not as a substitute for checking actual doneness. USDA's own guidance is to always verify doneness with a food thermometer rather than time or color alone; commonly cited internal-temperature targets are about 125°F for rare, 135°F for medium-rare, 145°F for medium, and 160°F for well-done, checked in the thickest part of the steak.

Worked example — a 1-inch steak cooked to medium-rare
A classic 1-inch-thick steak on a hot grill, cooked to medium-rare: timePerSideMin = 1 × 3.5 = 3.5 minutes, and totalTimeMin = 3.5 × 2 = 7.0 minutes total, flipping once at the halfway point. That lines up with the commonly published "3:30 per side for medium-rare" convention this calculator is built on.
Size the steak up to a thicker 1.5-inch cut and go to medium doneness instead, and the linear scaling gives timePerSideMin = 1.5 × 4.5 = 6.75 minutes, totalTimeMin = 13.5 minutes — nearly double the thin medium-rare steak's time, from both the extra thickness and the higher doneness rate.
A thin 1/2-inch steak cooked rare needs far less time: timePerSideMin = 0.5 × 2.5 = 1.25 minutes, totalTimeMin = 2.5 minutes — barely enough time to develop a sear, which is exactly why thin steaks are easy to overcook if you're timing by feel instead of watching closely.

Why does the calculator scale time linearly with thickness?
It's a deliberate, disclosed simplification. Real heat conduction into a steak isn't perfectly linear with thickness — a 2-inch steak takes more than twice as long as a 1-inch steak of the same doneness, because heat has to travel further to reach the center and the geometry changes how quickly that happens. Linear scaling is a reasonable approximation for typical steak thicknesses, but it becomes less accurate for very thin or very thick cuts.
What internal temperatures correspond to each doneness level?
Common reference points are about 125°F for rare, 135°F for medium-rare, 145°F for medium, and 160°F for well-done, measured in the thickest part of the steak away from bone or fat. Note that USDA's own food-safety minimum for whole cuts of beef is 145°F with a 3-minute rest — doneness terms like "rare" describe preference, not a food-safety threshold, so cooking below 145°F is a personal choice, not a USDA-endorsed safe minimum.
Does this work for pan-searing, not just grilling?
The per-side rates are based on grilling at roughly 400°F, so pan-searing at a different heat level, with different oil, or finishing in the oven will shift actual times somewhat. The relative pattern — thicker steaks and higher doneness levels both taking longer — still holds, but treat the specific minutes as a grilling-specific starting point rather than a universal number across cooking methods.
Why did my steak take longer or shorter than the estimate?
The most common reasons are a starting temperature colder than room temperature (a steak straight from the fridge cooks slower), a grill or pan that runs hotter or cooler than the ~400°F this chart assumes, or a cut with more fat or bone that changes how heat moves through it. This is exactly why the calculator's numbers are framed as an estimate rather than a guarantee — use them to plan your timing, then finish by thermometer.
